l Baby potatoes 6
l Spinach 1/4 cup chopped
l Onion 1 chopped
l Tomato 1 chopped
l Dhania-jeera powder 1tsp
l Red chilly powder ½ tsp
l Tomato sauce 1tbsp
l Coriander leaves for garnish
l Grated coconut for garnish (optional)
l Oil 2tbsp
l Salt to taste
Method:
Boil potatoes and skin them. Prick the potatoes with a fork. Mix sauce, chilli powder, dhania-powder and salt. Marinade potatoes in this mixture for 20 minutes. Heat 1tbsp oil in a pan and sauté potatoes till dry. Keep aside. Heat remaining oil in a pan and fry onions and tomatoes and sauté till homogeneously blended. Now introduce spinach and green chillies and stir fry. Add the potatoes, coconut gratings and serve hot.
