What I am going to share with you all is a delicacy which is not only scrumptious but is fervently adored by the Parsi’s as well as all the food lovers. This dish consists of chicken which is stewed in an aromatic and flavourful gravy prepared with Onion, ginger, garlic, tomato puree and soaked and mashed Apricots sprinkled with powdered Cinnamon, black cardamom, white pepper, cumin, red chilies and turmeric, drizzled with Worcestershire sauce and malt vinegar.”

She adds, “One can add jaggery to further enhance the flavor along with a sprinkle of garam masala powder. The dish is served hot and garnished with deep fried potato straws/match stick sized potatoes. It is not only sweet but also delectable because of the apricots which combine fantastically with a sharp taste of red chilli powder and Worcestershire sauce.”

If you come to think of it, between the kitchen affairs of a saas-bahu duo in Indian households, there’s always some healthy competitive sass brewing. The Bawa ménage is no different. This year for an erstwhile, from the 11th to 21st August, SodaBottleOpenerWala in BKC, showcase a jovial-spirited Parsi styled rival menu of Saas-Bahu!

Chef Akshata Karkaria expresses, “We’re having some fun this Navroze – not the run of mill fare, not the typical chef either. As the saas bahu due is shaking the kitchen a couple of fun innovations. My Ma in-law Bachi Karkaria is doing something unique to her family recipe, Gos nu saas (as opposed to macchi) and I’m making our family favourite (prawn) Curry with drumsticks and brinjal which I dare say may actually taste even nicer.”
