BHOPAL: Bringing another delight for food enthusiasts Courtyard by Marriot will be hosting a food journey to Dravidian cuisine from April 6-16, ‘Dravidian Street Food of South India’ at Momo Café-the multi cuisine restaurant from 7 to 11 pm. From the spice route of India, the cuisine has been brought to the City of Lakes by chef MY Amruthavalli, who hails from Tamil Nadu. He will be cooking and serving the sumptuous taste of Hyderabad, Chennai, Kochi and Karnataka which will include stunning chutneys, majiga idli, pesarattu iddiappam, kalappam and fried, stewed, roast seafood and temple payasam.
“It has been a tough research as much has not been written about Dravidian cuisine. There are limited references. But I have made an attempt to present a sample,” said Amruthavalli. Adding she said, “The Dravidians made a dish called masaa which is similar to the modern dahivada. But I have adapted this in rasa vadai. They also made bread in a tandoor but unfortunately there is no substantial information about this. So we could not incorporate it.”
There are equal numbers of vegetarian and non-vegetarian dishes from the four Southern wtates. Amruthavalli will be assisted by junior chefs from Andhra Pradesh and Kerala. There will be live cooking stations for stews and kalappam, Travencore appam, puttu and kadla, idlis and chutneys, dosai, muraku masala, vepadu, biryani station. One can enjoy kappa pappadumpidi (cassava fritters), vazhapuzha cutlet (banana flower croquettes), meen kozhambu (fish curry), urlai roast (potato and chillies), avial, poriyal, pulsu, chicken chettinad, palakoora pappu (spinach and lentil), guttimvenkaya (eggplant and sesame curry), puloihora (tamarind rice), besibellah bhath, kebabs, payasam and vatal appam in buffet.
