In the third part of the series, Celebrity Chef Ranveer Brar, who is a Celebrity Chef, Restaurateur, TV Show Host & Author, shares his views about the ever-changing Indian food scene in 2016.
How has our food scene changed in the last few years, in terms of restaurants and our general tastes?
The food scene has become more approachable with restaurants cooking food like home and tying up with home chefs. Also, eating out culture is more prevalent now across the country. Our fascination with foreign food is now being balanced with our need to explore regional & sub-regional food of India.
What cuisines are still popular but have changed slightly over the last few years in India?
Italian & Chinese are still popular but have changed in terms of positioning and offer. From being exotic to being familiar, both are now household names and the need to explore more has manifested in their deeper study. While Italian was just about pasta and pizza, now risotto and Italian desserts are now commonly seen. Chinese similarly has moved from being about rice and noodles to dim sums and duck.
In terms of certain food products or items, how have things changed?
The major change has been in the outlook towards certain categories of food products, especially frozen & processed food. In a world where natural is the key to eating right, people are more aware of what’s coming in a can or off the freezer.
